4 chicken breasts (approx. 2 lbs.)
1 large green pepper
1 large red pepper
1 medium onion
1 can diced tomatoes with green chiles
1 packet fajita seasoning
Cut peppers and onion in long strips, place in bowl and combine. Spoon half of tomatoes in bottom of crockpot. Top with half of pepper and onion mixture. Place chicken breasts on top and sprinkle with 1/2 of seasoning packet. Flip chicken over and sprinkle with remaining seasoning. Spread remaining tomatoes over seasoned chicken, then top with remaining pepper/onion mixture. Cook on high 4-6 hours or low 6-8 hours. Remove chicken and slice or shred. Remove 1 cup of liquid from crockpot. Return chicken to crockpot and cook an additional 30 minutes on low. Serve with 8" flour tortillas, cheese, sour cream, guac. Enjoy!
