Oriental Vegetable Soup Recipe
3 Cups Water
1 Tbsp. Garlic, minced
1 tsp. Ginger, minced or grated
1/2 Cup Carrots, chopped
1/2 Cup Purple Cabbage, chopped
1 Tbsp. Soy Sauce
1 Scallion, chopped (1/4 Cup)
1/2 tsp. Asian Hot Sauce, or to taste
1 tsp. Sesame Oil
1. Boil water on high.
2. Add garlic, ginger, carrots, cabbage, and soy sauce. Let boil 10 minutes.
3. Turn off heat and add scallion and hot sauce.
4. Allow to cool 5-7 minutes.
5. Add sesame oil just before serving.
I picked up this method of making soup from an Asian farmer who would incorporate whatever vegetables he had on hand. He had this soup for breakfast every morning before a busy day at the farm. It's a delicious no-fail recipe that is quick and easy to prepare, and has become a favorite of mine. I have altered the ingredients and quantities to make it my own, and to make it absolutely perfect.
