Smoky Hot Albondigas Soup

Ingredients:

2 cloves garlic, minced

½ cup diced onion

½ cup diced red pepper

1 teaspoon cumin

1 teaspoon crushed red pepper flakes

2 teaspoons smoked paprika

1-11oz can diced tomatoes and green chilies

2 cups chicken or vegetable broth

½ cup cooked rice

½ cup fresh or frozen corn

12oz frozen meatballs

¼ cup cilantro, chopped

¼ cup diced fresh tomatoes

Tortilla chips 

Directions: 

1. Combine first 10 ingredients in a crockpot and cook on low for 5 to 6 hours. 2. Increase heat to high, add meatballs and continue to cook for 1 hour. 3. Divide soup between 6 bowls and top with cilantro and fresh tomatoes. Serve with tortilla chips This easy to make soup has been a favorite in our family for years. Great for holiday family gatherings or anytime you want a fast and easy dinner the whole family will love.

Note: the spiciness of the soup can be reduced by simply replacing the tomatoes and green chilies with a can of diced tomatoes.
