​Prep Once, Enjoy Twice: Double Duty Recipes

We like to mFamily Dinnerake things easy at Rabbit Creek. When we save you time, we know that you use that time for valuable things. Maybe you spend a few more minutes playing games with the kids or take an extra long phone call with an old friend. When making dinner is simple and not fussy, life is just better.

One of our favorite tricks for keeping it simple in the kitchen is to prep and cook fewer times throughout the week. If you prep once and think creatively, you can have a few meals from that one time cooking and preparing. We’ve gathered up a few ideas to help you make the most of your time in the kitchen.

Double duty meal ideas:

Chili: Make a large batch of chili. Double your favorite chili recipe and pile on your toppings of choice. Looking for new topping ideas? Try mustard, avocado, corn chips, bacon, crushed tortilla chips, or jalapenos.

Second use: Reheat chili on the stovetop and pop a few potatoes in the oven. Fill steaming hot baked potatoes with chili, cheese and leftover toppings. Toss a green side salad to balance out the meal.

Ham: Place a ham in the crockpot with brown sugar, pineapple juice, and Dijon mustard. Let it slow cook all day while you’re busy. When you’re ready for dinner, serve with peas and brown rice.
