On steamy summer days, why heat up the whole kitchen for one meal? The summer salad steps in to save the day when you just don’t want to slave over the oven. Plus, a light and cool salad is refreshing while filling (and fueling) you up!

If you think you know all the salad recipes you need, think again. The basic green lettuce + dressing + crunchy topping is only the tip of the iceberg in the salad world. We have some new ideas for spicing up your salad game.

Summer Salad Ideas

Tomato Summer SaladTomato Salad

There are tons of varieties of tomato salad, and we think most of them are great options for a summer side dish. Here are a few mix-in options for summer’s favorite vegetable:

  • corn, mozzarella, fresh herbs
  • basil, balsamic vinaigrette
  • heirloom tomatoes, olive oil, sea salt
  • cucumber, red onion

Berry Salad

Bright, juicy berries add a special something to your lunch or dinner salad. Almost any kind will do, but we love throwing blueberries, strawberries, and blackberries on top of our greens. Almonds and creamy cheeses go well with berries, too.

Egg Salad

Egg salad is an easy one to forget, but we want to send it back into the spotlight. Egg salad is a light and refreshing lunch. It tastes great tucked inside of iceberg lettuce or a wheat wrap.

Chickpea Salad

The chickpea stars in this delicious mix of avocado, feta and herbs. If you like this version, try out a few more chickpea salads for easy lunches.

Pasta Salad

Pasta salad is a staple at summer barbeques, but we believe it has a place at lunch, dinner and snack time, too. Try a tortellini pasta salad or a light and lemony orzo salad. Add veggies, meats, and cheeses to make your mix unique.
