Cauliflower Soup

Cauliflower Soup Recipe


¼ package bacon, cut into chunks

¼ cup butter

½ onion, diced

2 potatoes, peeled and chopped

2 carrots, peeled and chopped

3 celery sticks, chopped

1 head cauliflower, chopped

1 liter chicken stock

1ltr half and half (1 cup heavy cream and 3 cups milk)

6tbsp flour


Fry bacon in 1/8 cup of butter, add onion cook till brown

Add potato, celery and carrots, cook for 5 mins

Add cauliflower cooked till soft (15 mins)

Add stock

In a second pot, melt butter, add flour, stir for one min

Add cream in splashes making sure it’s absorbed before adding more

Mix both pots together, cook for 15 – 20 mins more

Season to taste
