Chipotle Bacon Mac & Cheese Slow Cooker Soup

8 slices bacon, cooked and crumbled

4 cups elbow macaroni (or small tube pasta)cooked

3 tablespoons butter

2 10.5 oz cans chicken broth

1 10.75 oz can condensed cheddar cheese soup, undiluted

1 cup water

1 teaspoon ground chipotle chili pepper

½ teaspoon ground mustard

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

1½ cups shredded sharp cheddar cheese

½ cup flour

2 cups half and half

1 12 oz can evaporated milk

dried parsley

tomato, diced, if desired

green onion, chopped



Place bacon, macaroni, butter, broth, cheese soup, water, chipotle, ground mustard, garlic and onion powder, salt, pepper and cheddar cheese into the crock pot and stir to combine. Cook on low 3 hours. In a bowl, whisk together the flour and half and half. Stir into the soup along with the evaporated milk. Cover and cook for another 30 minutes. (add more broth if soup gets too thick). Sprinkle soup with dried parsley. Add diced tomatoes and green onions if desired to each bowl.
