Southwest Lentil Chicken Barley Soup

1 pound ground chicken
2 tablespoons olive oil
4 carrots, diced
1/2 cup celery, diced
2 garlic cloves, minced
1 onion, chopped
1/4 teaspoon cumin
1 teaspoon parsley
2 cans (15.5 ounce) black beans, drained
1 (28 ounce) can crushed tomatoes
3/4 cup canned corn
1 bag (16 ounce) lentils, rinsed
1 1/2 cup barley, rinsed
2 (32 ounce) cartons chicken broth
1/4 cup Parmesan cheese


In a large soup pot add the oil. Add the chicken and cook until brown. As it is cooking break into pieces, cook about 8-10 minutes. Add the carrots, celery, garlic, and onion. Cook until everything is tender for about 6-8 minutes. Add the cumin, parsley, black beans, crushed tomatoes, and corn. Cook for another 5 minutes. Add the lentils, barley, chicken broth, and Parmesan cheese. Cook for about 30 minutes.
