Springtime In A Bowl

2 tablespoons butter

1 large onion, chopped

2 cups fresh asparagus pieces

2 teaspoons fresh thyme leaves

1/2 teaspoon freshly ground black pepper

3 cups chicken broth

1/2 cup uncooked orzo pasta

1/4 cup freshly squeezed lemon juice

1 cup fresh baby spinach, trimmed and torn into small pieces

1 cup shredded Parmesan cheese


In a large saucepan over low heat, melt the butter. Add the onion and asparagus and sauté over medium heat until the onion is translucent and asparagus is soft – about five minutes. Stir in thyme and pepper. Add the broth and orzo and bring to a boil. Remove from heat and puree soup using a food processor or immersion blender. Return soup to saucepan and return to boil; stir in lemon juice, spinach and cheese. Remove from heat, cover and let rest for 2 to 3 minutes. Serve hot. Serves 4.
